This week was just EASY, in a way that things haven't been easy for a while, despite some considerable temptations.
First of all, Chris and I celebrated our two year anniversary on Wednesday with a nice dinner out at Bob Chin's, which is a seafood/steakhouse kind of thing. I was careful with breakfast and lunch and then made a pretty good choice at dinner- sauteed scallops and green beans. The plate came to the table and I immediately saw where I could've made it a little healthier... the green beans were shiny with oil, and the scallops were drowning in a brown butter sauce. However, it was a very small portion of both, and I didn't even finish the scallops because they were too rich. And no dessert!
Then the very next night, we had something else to celebrate: after years of doing consulting work and scrambling to find one contract after another, my awesome Chris found himself a permanent position! Woo hoo! Chris's line in rehearsal that night was especially appropriate:
You might think that Cracker Barrel would be even more of a challenge, if you're thinking about biscuits and gravy and fried apples, but I have to say, that restaurant has made huge strides towards making healthy options available! There were five or six options for me, under 600 calories. I opted for the Grilled Chicken and Fresh Vegetable Salad and it was the bomb.
Anyway, I feel like I totally got in a good groove this week... to the best of my ability, I planned my points in advance rather than calculating them after the fact. Here's hoping for another week of the same easy traveling!
